The Vieux Carre is a cocktail representing the French Quarter of New Orleans, first designed at the Carousel Bar at Hotel Monteleone. This cocktail doesn't bring out the rye has strong, but creates a blend of flavors to generate a new profile in your mouth. The use of sweet vermouth does bring a bit more of a wine-like flavor with a lot of classic design playing in your mouth. The Red Heaven has amaretto on it as well as grenadine so it's tough to assume this would be a poorly created cocktail. Probably going to have rich flavor, sweetness and almonds, right? Well, if you ask Ian, he had a few servings of this drink because he liked the flavor. This will, of course, impact him in future episodes as he gets more "closey eyed." And I quote, "mmmmm, that's good." This cocktail definitely brings in a peachy aroma which draws you into the initial sip. This is an easy to drink cocktail with a slightly awkward "rubber/plastic" transitional flavor balance that's easily forgiven by the sweet flavors. Do you think this drink needs a garnish? The Cuban Pepsi has no Cuban ingredients but you can probably use Havana Club if you want to make it more Cuban, Here, in the US, we have a hard time getting Havana Club legally so we're going to save our bottle for something more...complicated. This cocktail mutes some of the pepsi cola flavor by bringing up a bit more lime and some nice spice from the Captain Morgan Sherry Cask, but there is nothing complicated in this cocktail. We have a diet pepsi and still some of the pepsi flavor comes out and manages to keep this drink from being too sour, considering the amount of lime in the cocktail. Cuban Pepsi 3/4 oz. Lime, 1 oz. A gray cocktail with a Russian themed look and feel. Russian in the fact that it utilizes a spirit from Russia: vodka. It gets a part of its color from the imparting of Creme de Violette. A nice aroma, has a flower taste with a front-end sweetness, a middle tart and a bit of an alcohol intensity in the finish. A great use of grapefruit juice as it's used more like a liqueur within this recipe. Not a bad little recipe. This is a classically designed cocktail, no doubt, with a flair of the Elderflower with just enough sour to make you want to go back for a second sip. Of course, the cucumber has a good use in this cocktail, giving a light cucumber taste amongst the aromatic flowery elderflower liqueur. Virus Vodka, currently available in Texas retailing for USD$19.99, this is a new brand of vodka complete with Erlenmeyer flask designed bottle and a neat virus like logo on the front. Our Virus vodka review is a week or so old, we almost forgot about it in our haste to record a group of video's for our week off this upcoming week, but Virus was kind enough to remind us they sent the bottle and here is the result: Virus Vodka, The Review. We also picked Tito's vodka as a baseline to compare this against, given the minor nuances of a vodka and the slight aroma's and flavor they can make, we wanted a stand-in product we'd use for other cocktails to help determine where Virus fits on our scale (and our palate.)

Today we take Three Chile from Royal Rose and produce a cocktail with Mezcal. The sweet and hot along side the smokey of a mezcal brings something entirely different to the proverbial table. This drink has the fire and spice on your tongue with a lingering forest fire with just enough acidity to make you desire additional sips. Definitely a recipe that can become a classic along side a great way to utilize mezcal.
