In 1985 the Dervaes family bought a run-down circa 1917 craftsman-style house in Pasadena, just 15 minutes from downtown Los Angeles. They decided to bring the country homesteading lifestyle to their urban plot. The size of which is only 66' x 132'. Despite its size, the Urban Homestead project is a fully functioning urban farm in every way and it supplies our family with 6,000 pounds of organic produce annually. 90% of their vegetarian diet comes from the garden so they eat on almost $2.00 per day per person. They also power their home with alternative energies and fuel their car with home-brewed bio-diesel. The highly productive Urban Homestead project is now widely considered a successful one-of-a-kind model for sustainable agriculture and eco living in urban areas and has been featured in multiple news medias both nationally and internationally. I had the most incredible and educational discussion with the delightful Dr. Hana Kahleova. If you want to know what to eat for diabetes and weight loss then look no further! Hana Kahleova, M.D., Ph.D., is the director of clinical research at the Physicians Committee and directs research studies analyzing the effect food choices have on insulin resistance and the regulation of a healthy body weight. Her current research includes analyzing the thermic effect of food in response to a 16-week dietary intervention. Dr. Kahleova has published more than a dozen nutrition studies. She is the author of Vegetarian Diet in the Treatment of Diabetes (Maxdorf, 2013). She also wrote the chapter about using a plant-based diet to treat diabetes in Vegetarian and Plant-Based Diets in Health and Disease Prevention (Academic Press, 2017). Her favorite research topics include testing the effect a plant-based diet has on metabolism, insulin function, fitness, and mental health, as well as studying the impact meal timing and meal frequency have on metabolism and body weight. Dr. Kahleova earned her doctorate in nutrition and diabetes and her medical degree from Charles University in Prague, Czech Republic. As a postdoctoral research fellow at Loma Linda University in California, Dr. Kahleova analyzed data from 50,000 Adventist Health Study-2 participants. She analyzed data on meal frequency and timing in relationship to changes in body weight. She finds two to three meals a day, without snacks, are optimal for body weight control. This led to her recommendation to eat breakfast regularly and to make it the largest meal of the day. Dr. Kahleova’s favorite prescription for optimal health and wellness is to eat a whole-food, plant-based diet and to be physically active. She was born in the Netherlands, immigrated as a child to the U.S., grew up in Montana, and went to Montana State University. She did her medical training, followed by a general surgery internship and residency, at the University of North Dakota School of Medicine and Health Sciences. She is certified by the American Board of Surgery and American Board of Lifestyle Medicine. Dr. Van Dyken, is a general and trauma surgeon at the Queen's Medical Center in Hawaii. She thoroughly enjoys her busy practice. It is especially rewarding for her to see the positive changes in her patients as they do a 180 and completely restructure their lives around plant-based living. In her spare time, Dr. Van Dyken loves yoga, photography, sailing, cycling and playing musical instruments including the guitar, ukulele and violin. She shares her life with her husband Russell, 14-year-old dog Chaucer and two cats. She has been vegetarian since she was 9 years old, and strictly plant-based since 2010.
