It's Thanksgiving, and it's also 2020. Those two things probably cancel each other out, right? Which is why we can only muster the energy to talk about STUFFING. You don't even need teeth to eat it! It's easy beyond belief (throw a few things in a bowl, douse with broth, and shove it in the oven? YES. CAN.) PLUS.... it's goddamned delicious. In our opinion, it should no longer be confined to one holiday. Set Stuffing Free! Wait, we mean Dressing! (This just in: there's a difference. And yes, we will explain it in the episode.) If you're having a Thanksgiving for one this year, might we recommend rustling up a little stuffing as a side dish? It'll warm your heart and soul. (And turkey is boring anyway.) While we are all for stuffing, creamed spinach, and a potato of any shape and size, celebrating a holiday that is built on a myth about the "founding" of America -- a myth that glosses over the mass murder of the Native peoples of this country -- is not ok. So perhaps a way to give thanks to this earth and to think about what this holiday actually stands for, is to cook and get familiar with indigenous ingredients and Native recipes; there is a whole world to discover. We are hoping that our next Thanksgiving (you know, the one where we get to be with friends and family again?) will be a menu focusing on Native American recipes so we can delve into these incredibly rich culinary traditions. Born in Senegal, Thiam is a New York City- based chef, restaurateur, author, and entrepreneur who has worked to bring the flavors and culinary traditions of West Africa to the rest of the world, and whose career runs the gamut between hospitality and social justice. His company Yolélé Foods advocates for smallholder farmers in the Sahel by opening new markets for crops grown in Africa; its signature product, Yolélé Fonio, is now available at retailers across America. It is also extremely delicious and, as Thiam says, easier to pronounce than quinoa :).
