 BBQ 042: Tejas Craftory's rustic chocolate and urban BBQ is a match made in heaven | File Type: audio/mpeg | Duration: 0:29:41

Chocolate and barbecue are a match made in heaven. That's what The Meat Men learned after visiting Tejas Chocolate + Barbecue in Tomball, Texas. During their Houston roadtrip, Yoni and Stover spent one morning munching on sweets and meats with Tejas Craftory mastermind Scott Moore, who shared the story behind his top-ranked BBQ, bean-to-bar chocolate and his well-regarded restaurant just out of Houston. It took a lot of willpower not to reach into the Tejas chocolate vats as they were spinning around making chocolate during our tour. Their chocolate is out-of-this-world, but so is their BBQ, which is getting just as much acclaim as their desserts. Make sure to try their pastrami on Thursdays. We got ours in a reuben sandwich and it was legendary. And their coffee chocolate truffles will get you humming as we learned quickly after chowing down on them. You can hear Stover and Yoni get hyper from munching on chocolate throughout this episode. As you can imagine, it gets kinda weird. Friends, we just followed the path. We started a hobby at home making bean to bar chocolate. Sales went alright at the farmer’s market and with some retailers. So much so that we decided to open our own store. Chocolate sales alone were not going to be enough to make it our livelihood, so we decided to add a cafe to the business plan. When we found the old house on North Elm Street in Tomball and looked at the market, we decided Old Town Tomball could use a good barbecue joint. That is exactly how we got here. We make chocolate and truffles from raw cocoa beans, and slow smoke USDA certified 100% all natural Prime Grade briskets at the oldest building in Tomball. We call it The Craftory. Learn about BBQ and cooking from some of the best of the best on this episode. The Meat Men Yoni and Stover roamed the San Antonio Stock Show and Rodeo Cookoff on a hungry mission. In this episode, the Meatmen took a load off at the Traeger Grills tent to hang out with and interview Doug Scheiding (from Rogue Cookers, and a Texas correspondent on the BBQ Central Show) and Clarence Joseph (Mama and Papa Joe's BBQ) about competition BBQ cookoffs, cooking equipment and cooking tips for the Meatmen. We got our first look behind-the scenes of a competition BBQ event, where more than 300 pitmasters representing Texas BBQ and beyond set up shop in a huge lot to cook all weekend in a battle of skills and flavor. It was a fascinating look at a different side of the BBQ family than we usually see at Texas BBQ joints. Yoni and Stover roamed the San Antonio Stock Show and Rodeo Cookoff on a meat mission. In this episode, the Meatmen sit down with Robert and Bryan from S&S Pit Crew (based in San Marcos, Texas) to talk about how competition BBQ varies from your traditional Texas BBQ joint, cooking low and slow versus hot and fast, and all the meat rubs, sauces and barbecue talk you expect from the Best BBQ Show. 82-year-old Texas BBQ pitmaster Tootsie Tomanetz is the guest this week on the Best BBQ Show. Tootsie helps run the pits at one of the best BBQ places in the world, Snow's BBQ in Lexington, Texas. You've heard about Snow's Barbecue before on the show, but this is the first time the great Tootsie has sat down to chat with the Meat Men. In the interview Tootsie talks about being world famous while still working as a janitor for a local school district and more fun stories. When Kerry Bexley opened Snow's in 2003 he knew immediately he wanted Tootsie as his star. When Kerry was young he remembered her Central Texas meat market and her legendary ham sandwiches. When Snow's was named the best bbq in Texas by Texas Monthly in 2008, the state (and then the world) began to notice the magic made there every Saturday. Thanks for listening! Kerry Bexley, owner of Snow’s BBQ, knew there was a demand for good BBQ in the small town of Lexington with a population of only 1100 people. Lexington has always been known for its Saturday BBQ. It’s just a tradition! Kerry and Ms. Tootsie Tomanetz, pit boss, discussed the possibilities in the late 90’s of opening a BBQ joint, but took no action until several years later. In November of 2002, Kerry stopped to visit with Ms. Tootsie, kicked the ashes around, and discussed again the opening of this joint. She told Kerry that if he was serious, they better sit down and have a real “heart to heart”. They did just that, and Kerry immediately started building the BBQ pits. March 1, 2003, was the first day of business… and Kerry’s intuition was right. Good BBQ, good service, and friendly people has helped to keep the fire burning, maintaining a steady and consistent business for the last five years. Along with Ms. Tootsie and Kerry, his daughters help out each Saturday morning learning the importance of responsibility and dealing with the public. he fire almost got out of control in May 2008 when Texas Monthly (http://www.texasmonthly.com/food/lexington-snows-bbq/) magazine named Snow’s BBQ as the best in Texas! Since that time, the entire staff at Snow’s BBQ has been doing everything possible to keep up with the demand and most important, maintain the quality.
