BBQ 039: Champion Texas barbecue competition cooks

Best BBQ Show show

Summary: Learn about BBQ and cooking from some of the best of the best on this episode. The Meat Men Yoni and Stover roamed the San Antonio Stock Show and Rodeo Cookoff on a hungry mission. In this episode, the Meatmen took a load off at the Traeger Grills tent to hang out with and interview Doug Scheiding (from Rogue Cookers, and a Texas correspondent on the BBQ Central Show) and Clarence Joseph (Mama and Papa Joe's BBQ) about competition BBQ cookoffs, cooking equipment and cooking tips for the Meatmen. We also sat down with the man behind San Antonio's Go'Shen Point BBQ (www.facebook.com/GoShenPointBBQ), the only person selling food at the San Antonio BBQ cookoff. Here's some info on this week's guest. From www.traegergrills.com/pro-team/doug-scheiding (ww.traegergrills.com/pro-team/doug-scheiding): "What do you get when you give someone with a degree in aerospace engineering a Traeger? Damn good barbecue. Doug Scheiding’s analytical background, Texas roots, and competitive nature were a winning combo when he decided to get into BBQ. He started back in 2009 when a neighbor asked him to participate in a fundraiser where they placed 3rd overall in brisket and 2nd in ribs. This event turned competition BBQ from a one-time bucket list event into a passion. Since then Doug formed a competition team, “Rogue Cookers,” whose name comes from his desire to push the limits with his recipes in pursuit of winning combinations. Doug has earned top awards at major contests like Grand Champion at the Houston Livestock Show and Rodeo in 2015, and Finalist in 2016 and 2017, American Royal 2015, Traeger Royal Battle Champion in Pork, and Jack Daniels Invitational 1st Place in Cook’s Choice. He was able to win these titles, and more, with the help of his Traegers -- a Pro 34 and Timberline 850. Doug has made a name for himself in cooking chicken in the competition scene, but if you ask him what his favorite thing to cook is, he’ll tell you full packer Texas Brisket. Stay tuned on @TraegerBBQ for more Doug Scheiding content." This year, Mama and Papa Joe's BBQ hooked up with Trager Grills and cooked EXCLUSIVELY on the #Pro34 model. This was a weekend double header consisting of the POTCIE Invitational Finale and the San Antonio Rodeo. We knew it was going to be a challenge. With 47 teams in the Finale, we managed a 4th Place Chicken and a 15th Place Brisket. Congrats to Kelly Curtis for the Grand and to my buddy Kevin Knight for the Reserve Grand Championship. On Saturday, 306 teams were in attendance. Once again, our Pro 34s ran like champs. At the end of the day, we were rewarded with a 6th Place Brisket and a 14th or 15th Place Chicken. Congrats to my boy Jay Tinney for the awesome 1st Place Brisket and the Grand Championship and to Corey Flores for the Reserve Grand Championship. Congrats as well to everyone fortunate enough to hear their numbers called. Thanks for the support of some awesome products. #Traegergrills, #Traegernation #smokinwithsmithfield, #kosmoq, #Headcountry, #butcherbbq, #sucklebusters, #joescookshack, #porkpachanga, #texaspepperjelly" From Go'Shen Point BBQ www.gpbbq.com (http://www.gpbbq.com): "It's our calling to deliver mouth watering BBQ to this beautiful land the way God intended, Texas Style!
