Summary: Rip Esselstyn is a former professional triathlete and firefighter who now works for Whole Foods Market through his company Engine 2. Rip is an amazing advocate for healthy eating, and Engine 2 is a great resource for anyone wanting to transition to a plant-based diet or simply include more unrefined plant foods in their diet. With his team, Rip hosts multiple retreats and events throughout the year where people can go to learn about the basics of how and why to eat what he calls a plant-STRONG diet. He’s also the creator of the Engine 2 food product line sold at whole foods, and is the author of three books - the third of which just came out in December 2016, and has had amazing success so far.
