Watch the video to see how my grandma used to make fudge and how my mom makes it to this day. Once you learn to recognize when the sugar has reached the soft ball temperature, fudge is pretty easy to make. And it takes so few ingredients! This recipe is old-school. You won't find any evaporated milk, marshmallow fluff, or mashed potatoes here! Give it a try and let us know how it turns out!
Here is a quick video showing how we steam and cube pumpkin for use in salads. In this video, I steam the pumpkin before cubing because it's easier to peel once cooked. You can also peel the pumpkin first and then steam it if you wish. http://www.youtube.com/watch?v=_WpSAcSDoiE
Here is a quick video showing how we clean pumpkin seeds to prepare for roasting.
Learn how to easily make homemade pumpkin puree. Use pie pumpkin or leftover Halloween Jack O' Lanterns (without candle wax!) to make a simple puree that can be used immediately or frozen to use in the off-season. This is an instructional video to accompany our cookbook Easy Pumpkin Recipes: There's More to Pumpkin than Pumpkin Pie! Use this pumpkin puree in a variety of pumpkin recipes, such as pumpkin pie, pumpkin smoothies, pumpkin soups, pumpkin mac and cheese, pumpkin fudge, and more!
Here is a really simple granola bar recipe that takes minutes to make. It's made with homemade granola. Get the homemade granola recipe here. Most granola bar recipes call for butter and processed sugar--OK for an occasional treat, but certainly not something I want to serve my 4-year-old all the time. This recipe uses coconut oil and maple syrup as healthier alternatives. Use brown rice syrup, agave nectar, or honey instead of maple syrup for a different flavor. (Honey will produce a "stickier" bar.") We use peanut butter here, but other nut/seed butters will work as well (and will make these a school-friendly snack.) A quick and easy granola video. I remember large jars of granola in the cupboard as a child. My mom would make it at night after we were asleep. A delicious breakfast to wake up to!
