Often the term Cajun becomes misconstrued by the general population outside of Louisiana. It’s usually associated with face disintegrating spice and funny French accents. While that is true to a certain extent, those qualities are not what define Cajun culture. It is as GoNOLA Radio music host George Ingmire describes, a “cultural phenomenon” born and surviving in Southwestern Louisiana. New Orleans is not by virtue a Cajun city, but luckily for us, we have many Cajun influences that create a strong presence within the unique social anatomy of New Orleans. New Orleans Food Goddess Lorin Gaudin talks with Isaac Toups who is bringing the food traditions of his hometown Rayne, LA, located right in the heart of Cajun Country, to New Orleans’ Mid-City. Toups Meatery, as one might deduce, will be heavy-handed with the Cajun culinary emphasis on meat – be it pork or seafood. The Lost Bayou Ramblers are the Cajun Rolling Stones of New Orleans and Louisiana as a whole. The six piece band from deep South Louisiana has reached rock star status, transforming traditional Cajun songs to full on dance party soundtracks for live audiences. George Ingmire talks to the members of the Ramblers about what gets them going on stage. See the Ramblers playing at the French Quarter Festival on April 14 and later that night at One Eyed Jack’s. Scott Aiges is the man responsible for putting on the Louisiana Cajun-Zydeco Festival in June in New Orleans. He talks history with Mikko on the Acadians of Southern Louisiana and how the mix of ethnicities and cultures developed what we now know as Cajun traditions and music. He explains that the Cajun-Zydeco Festival is an opportunity to see an extension of Jazz Fest and makes the wonderful food and culture of Cajun Country accessible to New Orleans visitors and residents. . There's a new Cajun restaurant in town called Toups' Meatery in mid city. New Orleans food goddess Lorin Gaudin speaks with the chef and owner, Isaac Toups, who is from the heart of Louisiana Cajun country.  Lorin Gaudin: Cajun food means many things to many people. Most think it's about being spicy, but those in the know understand it's about food that's really well spiced. When we think of Cajun dishes those that spring to mind include boiled seafood jambalaya, stews, fricassees, black kettle cooking and the smoked meat traditions of sausage and boudin making.  Chefs Donald Link and Stephen Stryjewski brought country food to the city in the warehouse district with their restaurants Cochon and Cochon Butcher and coming soon to mid city, Carrollton Avenue to be precise, right on the streetcar line near our New Orleans Museum of Art will be Toups' Meatery. A celebration of the delicious Cajun roots cooking from chef Isaac Toups.  Chef Toups has a pedigree that can't be beat. He's from Rain, Louisiana and made his bones in several local restaurants, most notably Emeril's Delmonico where he was responsible for creating the charcuterie, now bringing those skills and more he's doing his own restaurant and we welcome chef Isaac Toups to the show.  Isaac: Thanks Lorin.
