They can be powder-based, water based, class K for example. Class K is the one used for kitchen since the kitchen could have burning oil and if you try and put out the fire using water based fire extinguisher, it may just spread out. From a different perspective, if you use powder-based, it may sink into the oil and may worsen the fire.
