Summary:    The Bison, also known as Buffalo, roamed the plains of North America for eons.  Perfectly adapted to the changing weather conditions and prairie grassland, the Buffalo provided food, shelter and clothing for Native Americans over countless generations.  Today, the Buffalo is returning to the plains.  Raised on farms and ranches, Buffalo provide a full-flavored meat that is extremely healthy.  This week we talk with James and Sandy Stepp of the Wichita Buffalo Company in Hinton, Oklahoma about Buffalo and why it is rapidly becoming a favorite meat with the health concious.
