Since entering my semiretirement, I have significantly curtailed amount of podcasting and writing I post on this website, but I continue to do literature research so I can keep sharing more useful information to help you restore and maintain good health. In adopting a carbohydrate-restricted diet, some of us have trouble staying on course. It can be hard, especially if you don’t have access to recipes and menus to help you along the way. To aid with that problem, I have the honor of inviting Ms. Lisa Marshall to be my special guest today. Ms. Marshall is a co-author of the best-selling cookbook series, “Low-carbing Among Friends”. Because I found it to be a great resource, I wrote a couple of articles which are included in the books. I hope you’ll enjoy reading them. This is my story and the beginnings of our company. After leaving the Air Force as a disabled veteran in 1981, I began to increase in weight more and more without being able to stop it. I tried dieting and exercise and eventually like many people, lost hope in my ability to have any kind of weight management in my life. I became settled in the fact that I would be heavy and obese for the rest of my life. Along the way, I began to experience many side effects from my weight condition including sleep apnea, high blood pressure, sore joints and back problems, to name a few. In the late 80′s, I created a food company in New England focusing on low fat snacks. We had low fat cookies, low fat pretzels, and low fat candy popcorn in many flavors. I was now in a size 48 waist pants and a 5XL tee shirt, boy was I miserable, and hopeless. I was hungry all the time and found my best comfort in food, and the more I ate the more miserable I became. I had no answers and no solutions. Just like many others, I felt unable to stop this diet roller coaster. The LC Foods business started with an idea to create new products never before seen with a new focus on low carbohydrates. This undertaking became so involved and technical, that it took over 1 1/2 years of development to make the perfect high carb product replacements for flour, sugar, milk, and cereal. We insisted on quality ingredients and a very good tasting end product, no cardboard or saw dust, would be tolerated. People have had that before and we were just not going to settle for that. You don’t know how many times I wanted to give it up, but I pressed on. I want to help people struggling with their weight like I was. Beginning last week, I have been producing a special series on Cardiovascular Disease and Diet for the Carbohydrates Can Kill Podcast Show. I have the honor of inviting Dr. Dwight Lundell, M.D. back here as my featured guest for the conclusion of our very interesting conversation. The cardiovascular system, like other systems of the body, is subject to disease development by improper diet. Contrary to the conventional wisdom that cholesterol plays a major role in impacting the health of the cardiovascular system, an increasing number of evidence has shown inflammation is the real culprit of cardiovascular diseases. It is important to understand that without inflammation, cholesterol alone does not cause cardiovascular disease. And, it is more important to recognize where the inflammation starts. The answer is hyperglycemia. Dr. Lundel was so disappointed with his successful career in cardiovascular surgery because he found that his skillful surgical technique did not prevent his patients from recurrence of cardiovascular disease. Starting today, I am presenting a special series on Cardiovascular Disease and Diet for the Carbohydrates Can Kill Podcast Show. I have the honor of inviting Dr. Dwight Lundell, M.D. back here as my featured guest. The cardiovascular system, like other systems of the body, is subject to disease development by improper diet. Contrary to the conventional wisdom that cholesterol plays a major role in impacting the health of the cardiovascular system, an increasing number of evidence has shown inflammation is the real culprit of cardiovascular diseases. It is important to understand that without inflammation, cholesterol alone does not cause cardiovascular disease. And, it is more important to recognize where the inflammation starts. The answer is hyperglycemia. Dr. Lundel was so disappointed with his successful career in cardiovascular surgery because he found that his skillful surgical technique did not prevent his patients from recurrence of cardiovascular disease. While performing more than 5,000 cases of cardiac surgeries, he was increasingly dissatisfied with the fact cardiac surgeries could never stop an increasing number of new cardiac disease and recurrences. After doing his own research and literature research, he found cardiac surgery is just a patch-up job. To help prevent cardiac disease, he understood that the dietary approach is most important and effective.
