This week we have a very special guest, Stephanie Gaudreau, joining us to chat about fitness, eating to perform, and overall health and wellness Blogger at Stupid Easy Paleo Author of The Paleo Athlete In January 2015 she will also be releasing a performance paleo cookbook Stacy has a girl crush on Stephanie and Sarah notes that Stephanie has amazing muscles While Stacy and Sarah wrap up their books, The Paleo View will be free form, chatty style Stacy shared on her latest and greatest PRs Sarah shared on her love for Crossfit and her process for finding her base PRs - she is loving everything about it and feels like she is getting what she needs on a physical and mental level, it is so enjoyable The group chatted about the Crossfit workout Murph Stephanie shared a bit on her holiday weekend, attending Crossfit regionals and what her training focus is these days Stacy stopped by Crossfit regionals and got fired up to lift, which made it a lifting weekend Stacy congratulated all the athletes who competed over the weekend (20:21) More On Stephanie Last year Stephanie competed at regionals, and she had completed three years of Crossfit training prior to that She was an athlete her whole life and in her early 20's got into mountain bike racing At the beginning she partnered Crossfit with her mountain bike racing, but she eventually identified that she was great at the strength part of Crossfit, not necessarily the gymnastics Olympic weightlifting became her sweet spot Last year she left her teaching job to work on Stupid Easy Paleo full-time While she had a wonderful experience competing, she decided to minimize her training while she focused on building her site, she found a way to maintain training, but to limit the stress it created She is back in training mode these days and setting PRs, bench-marking where her improvements are at these days with a more balanced approach She just got married and is getting set up in a new house, while also working on the new cookbook Finding balance is her primary focus (26:00) Listening to Your Body Stacy talked about the importance of listening to your body and taking note of the stressors in your life when looking at how and when to incorporate heavy lifting into your life Stacy shared on how she is focusing on better recovery these days and how her first ice bath went (32:38) Stephanie's Passion Stephanie is on a mission to help people understand that you can fuel yourself primarily with real foods and still have high quality athletic performance The idea that you can't PR on paleo is false, and remember that paleo means so many different things People can fuel for their sport with real foods and supplement with items are still under the real food umbrella, while still feeling good before, during and after training The super low carb or no carb approach does not work for everyone and you don't need to be an elite athlete to require carbs in your diet Stephanie is passionate about helping people understand what they can accomplish through nutrition, and to inspire people to take a look at their diet when they are trying to optimize their performance Stacy reflected on real food supporting fitness and performance goals Stephanie talked about identifying your training goals and how you partner your fueling approach with those goals (41:26) Stephanie's Top Three Tips for Applying the Real Food Mentality to Health and Performance Manage your carbohydrate intake appropriately - make sure you are supporting your system's demands properly Make sure that you are not chronically hyper-caloric Make sure you are eating enough fruits and vegetables - paleo is not Atkins, get enough colors of the rainbows and focus on those micronutrients in the form of food Your training is not just what you eat, it also comes down to balance, sleep, and nourishing practices Stephanie also touched on self experimentation and dialing in to find your personal optimal diet (52:26) Top 5 to 10 Fiber and Starchy Rich Vegetables for Active People Fiber - artichoke, celery, collards, cabbage, broccoli Starches - plantains, parsnips, lotus root, taro root, sweet potato, winter squash, yuca, peeled white potatoes, white rice The group chatted about other foods and not evaluating food with a strict paleo label all the time Stacy commented on variations within paleo and the importance of finding what works for you (1:04:18) Wrap Up Stephanie encourages people to check out weight training in some capacity that will benefit your body Stacy talked about the importance of finding a facility you click with, one with coaches who can help with your unique health history and goals Stephanie shared on how to get started with lifting when you need to avoid high intensity training Sarah shared her feedback on finding an exercise balance and regimen that supports AIP healing Thank you again so much Stephanie for joining this week's show! Stacy thinks that Leah may not be properly absorbing nutrients Stacy also touched on the importance of carbs within her personal diet and how balancing macros impacts her body's ability to digest and absorb It took a lot of trail and error for Stacy to understand what worked best for her body, and she encourages others to not lose hope and to test different macro structures within their diet Try focusing on eating more carbs, which you can get from sweet potatoes, plantains, and white rice if you can tolerate it Stacy also recommends to not eat a lot of poultry and to focus on some more easily digested proteins Sarah mentioned the benefits of digestive support supplements if you do not have a gallbladder - check out this episode of The Paleo View for more information on the gallbladder Either Diana Rodgers or The Paleo Mom Consulting could help further with troubleshooting Anonymous - worried about nutrient absorption If you are taking anything and it is aggravating your system, Stacy would suggest removing the supplement from your diet However, Stacy points out that consulting with a Nutritional Therapy Practitioner would be greatly beneficial and is what she recommends anytime you are looking at adding supplements to your diet Stacy also recommends that anonymous check out her blog post on this topic Sarah talked about how different supplements could aggravate the situation and the benefits of consulting with a professional Naz - what is the best way to test for food intolerances? The phrase "when available" should be a red flag You want to see, "we only use organic" or "we only use pastured animals" When at the farmer's market talk with the farmer's and ask questions about their products, if genuine they will excitingly share details Ask vendors of animal products, what the animals are fed, and if they say they receive supplement it means they receive grains Not all vendors can afford to be certified organic right away, so be sure to ask questions because many may utilize organic practices, but simply aren't certified Know that the produce shouldn't look grocery store perfect, that isn't the reality of real food Be sure to find more information on this topic on The Paleo View episode 45, featuring Joel Salatin The group discussed the differences between paleo services and paleo products, and how careful one needs to be when a product is labeled as paleo or primal Stacy asked Pete, Sarah and Simone to share on how to best sift through questionable paleo businesses Always read labels, the front of the package is just decoration Pete shared on sustainable practices versus short cuts to weight-loss (41:07) Pete's Health Transformation Pete use to live a really intense lifestyle and enjoyed going out all the time When he met Sarah he had accepted an unhealthy life, however, they did a paleo challenge together a month after meeting, but he went right back to his old habits after the challenge One night Pete woke up with a 102 degree fever and a painful heartbeat, and after a trip to the hospital discovered that he had pericarditis He was told that the impact of his pericarditis would last a lifetime Fast forward a few years later after starting Pete's Paleo, adapting a paleo lifestyle and working out, at a doctor's check up they discovered that his heart had healed Stacy noted that while many people come to paleo for diet purposes, a lot of people stay for health Sarah asked what consumers can do to support ethical paleo businesses Continue to support through your patronage and general word of mouth (especially sharing sample with family and friends), these companies are happy to connect with the consumers and to share on what their products mean to them And Pete notes that if you want to start a paleo business do it right, the market is there Don't make compromises Set your prices with integrity and awareness around your mission and purpose Simone talked about supporting the kickstarter campaigns There is plenty of opportunity out there and consumers need to simply demand the best To find gluten-free catering companies talk to companies and be very specific about what all needs to be excluded, avoid the phrases paleo and gluten-free, and talk more about the quality of ingredients, emphasize farm-to-table style, and the food allergies you need to work around Stacy noted how she handles companies/restaurants when making special requests and reminds people to not be apologetic about your health Simone notes to know where you are at and where you can and can't make requests Thank you Pete, Sarah and Simone for joining this week's show and for being a quality source! Ep. 88, Omega-3's In this episode of The Paleo View, Sarah and Stacy catch up on life happenings, discuss omega-3 benefits and sources, and address questions related to omega-3 consumption.The Paleo View (TPV), Episode 88, Omega-3's 0:00 - Introduction 0:47 - News & Views Showing love to others - Stacy on butt tapping, Sarah on accidentally hugging a stranger at PFX Stacy shares on her spring break and how great it was to unplug, and why she passed on an opportunity to participate in another Strongman competition Stacy also shared more on Paleo f(x) and how her and Matt took the time to relax and enjoy not only the conference, but the local happenings Their recent downtime allowed for Matt and Stacy to also reflect on the direction of the Paleo Parents and to rebirth the content that they share Sarah just received part of The Paleo Approach Cookbook back from editing and appreciated the lessons she learned from the editing process from The Paleo Approach and how to implement those during this round of editing to protect her health as best as possible While Stacy enjoyed vacation, she is excited to be back into her routine, her health focused diet, and back in the gym setting PRs People loved last week's podcast episode - Sarah and Stacy brainstormed ways to create that same awesomeness again Sarah reflected on her first appearance at Paleo f(x) and how at home she felt with all the folks there This week the show will focus on omega-3's 26:28 - Science with Sarah One of the overarching themes within the paleo diet is how to best balance omega-6's and omega-3's, and people are familiar with omega-3's due to its popularity in marketing There are three main types of omega-3 fatty acids Sarah shared on what a fatty acid is and went on to define omega-3's and the difference between the kinds of fats (ALA, DHA, EPA) The body really only uses DHA and EPA, and they are used for chemical reactions within the cell that produce signaling molecules that control inflammation, blood pressure, pain signaling, etc. - this is the key reason why we are trying to balance omega-3's and omega-6's, for their signaling properties Omega-3's and omega-6's compete for these chemical reactions ALA, the plant form of omega-3, is not the fatty acid used by the human cells and is not essential for life, EPA and DHA are essential for life Knowing the difference between these three nutrients, one has to strongly look at their supplements and what role they are playing in their diet EPA and DHA come from animal sources - fish, shellfish, grass-fed and wild meats, eggs If you are eating flax, hemp or chia for the omega-3's, there is not compelling reason to eat these foods as they are not a source Sarah's top recommended sources of omega-3's are salmon (fatty fish), brain (organ meat), grass-fed meat, sea vegetables (seaweed) Stacy points out that folks should check out the gallbladder podcast episode for more information on how her body handles fat when she supplements her diet with real food, and high quality sources of fat 44:39 - Questions and Answers Caroline - do the nutrients from canned fish degrade with time? why do I feel different when eating sushi versus canned fish? any suggestions on what to do with canned clams and oysters? When these fats are in whole food form they are far more stable than when in isolated oil form, and the structure protects the fatty acids from being oxidated Canned fish is a great source of omega-3's Sarah can't think of a biological reason why sushi versus canned salmon would create different feelings, but Stacy is wondering if the rice may be impacting how she is feeling since those eating a paleo diet tend to stick to a low-carb approach Check out the Paleo Parents recipe with canned whole baby clams, "Linguine" with Clam Sauce Sarah eats the oysters right from the can, but she doesn't like eating clams out of the can and recommends the Clam Chowder recipe from The Paleo Approach Cookbook once available There are many clam recipes that can be adapted to be paleo friendly, or you could create a bottom vessel for clams like paleo chips or crackers Both Stacy and Sarah contributed to the Primal Life Kit - be sure to check out this amazing package of resources! Science with Sarah In recent months Stacy found out that her mom has selective IGA deficiency, which is why her celiac disease hit her so hard Stacy reached out to Sarah wanting to learn more about it, if she might have it and why broth makes her feel so good There are five different antibodies cells that the human body makes and each have slightly different roles Sarah covered the five antibodies in greater detail They all play a very critical part in our resistance to infections because they are such an important part of the gut immune system Having a deficiency in IGA antibodies is not a good thing, there are two types of symptoms linked with this - susceptibility to infections and having an autoimmune disease The selective details means that you are only deficient in IGA and not the other antibodies Autoimmune disease requires a genetic predisposition, it is typically a collection of genes that somehow influence proteins that are part of the immune system We are just starting to understand how all these different gene mutations impact your risk of autoimmune disease, and selective IGA deficiency is one of them - it doesn't mean that Stacy's body isn't making any IGA, it just means it is harder for her body to Sarah talked about all the things that Stacy can manage and impact in a positive way to influence the gene mutation Sarah went on to explain why broth impacts Stacy the way it does Stacy is feeling 90% better from her dehydration and vertigo, but it could take up to two months for her body to adjust on the vertigo front and once you get it the first time it is easy to get it again Stacy is finding that mineral water is impacting her in a very positive way 43:07 - A Bit on Sarah's Health Sarah has had a difficult time with her health since last August and has seen her weight slowly creeping up despite how she had prioritized activity, sleep quality and quantity, a dialed in diet, and a modified sugar detox Out of curiosity Sarah began tracking her nutrient intake, and things looked great She was doing everything she knew how to do and realized it was time to get help, so she found a local integrative medicine practitioner The doctor ran a full panel of tests and Sarah found out that she has full blown adrenal fatigue, and some deficiencies in sex hormones You have to be tested by a specialist to identify if these are medical situations that you are dealing with Sarah talked about her treatment regimen and what choices her and her doctor are making together While you can go tremendously far with diet and lifestyle changes, there are times when an expert is required Don't forget to pre-order Real Life Paleo and The Paleo Approach Cookbook! 58:28 - Use your slow cooker Check out Arsy's e-book, the recipes in there take very little time to prep Arsy use to do chicken in the slow cooker with salsa for her work week meals when she had a hectic commute schedule Another favorite of Arsy's is beef, coconut milk and curry paste in the slow cooker You can also make a quick stir fry, salad or side of roasted vegetables to serve alongside some meat Stacy suggested rotisserie chicken, bagged salads and high quality already prepped foods Double the recipes you are preparing and freeze the extras Have a couple of high quality restaurants that you can rely on for the days when you don't have time to cook Be sure to also keep smart snack foods around so that you don't get overly hungry and make poor choices (1:02:45) Katie - if my broth never gets gelatinous, is it still nutrient dense? Arsy notes that yes it does still have a lot of nutrients to it, but to try ox tail to get it to gel Sarah notes that any cut of meat that has a lot of connective tissue to it will make your broth gel Stacy notes that a lot of people don't cook their bones long enough Be sure to at minimum cook for three days in a slow cooker, two days in a regular pot, and twelve or more hours in a pressure cooker When your bones are soft, your broth is done Add the vegetables in during the last four to six hours (1:08:07) Viola - what are substitutes for coconut?
