Intro (0:00)News and Views (0:56)Stacy's good news, the celebrity who shared Beyond Bacon in their cookbook collectionStacy's bad news, an injury over the weekendThe printing schedule with The Healing Kitchen, and how Sarah is managing her time and protecting her health despite a very stressful timelineThe Thing (12:41)Monday morning of this week, the World Health Organization published a statement in The Lancet classifying red meat and processed meat as carcinogensA working group completed a literature review, and based on that review and a majority opinion, have decided to label processed meats as an international agency for research on cancer group 1 carcinogen, which means it is a confirmed carcinogenic to humans; and they have decided to label red meat as a group 2A carcinogen, meaning it is likely carcinogenic to humansThey came up with these labels based on a majority, although not uniform; from studies linking high processed and red meat consumption with colorectal cancerEven in their statement they sort of say 'despite the fact that this has never been confirmed or explained in animal studies'Basically the press release led the media stories to say that bacon will kill you, and essentially sparked a social media battle between vegetarians/vegans and meat loversThe reasons this has escalated into a very heated debate very quicklyThe statements that Stacy has seen from meat vendorsThe confusion that comes from all the various pieces of information in the mediaSarah thinks that the information that the World Health Organization recommends tends to be on the money, which is why this statement caused such a to-do, because this is such a reputable organization making such a strong statementWe expect the World Health Organization to be objectiveSarah recommends that people check out her blog post from the summer on the link between meat consumption and cancerSarah feels that the science on meat consumption shows that we need to come up with a more complete definition for carcinogenicThere are really four mechanisms that are possible explanations on why processed and read meat consumption may cause cancer, and at least three out out of four of those explanations are missing the link between meat consumption and cancer when you are eating at least five servings of vegetables a dayWhen we are talking about the meat and cancer link, all of the compounds in meat that have been linked to cancer are no different depending on how that meat is raised - so unfortunately they are in both conventional and grass-fed meat, which creates a different platform for the discussionThe role that heme iron plays and the damage that it causes in the gut lining and cellsWhat happens with heme when chlorophyll is present - displaying what happens when you have a side of broccoli next to your steakThe cancer link doesn't happen anymore when you consume vegetables with your meat, and so it starts to be that high meat diets don't cause cancer - its start to be that high meat diets that are simultaneously low in vegetable content are creating an environment in which cancer is more likely to growAs soon as you add vegetables you are basically negating the high cancer risk of meat consumption, which you see in many scientific studiesHigh vegetable consumption is linked to a lower risk of every chronic illness, with the ideal number of servings per day being fiveIt is because of this information that Sarah feels you cannot uniformly say that meat causes cancer, because it is a very specific situation where meat is carcinogenicThe conversation should not demonize meat, but instead open the door for a discussion about why it is important to have a balance of vegetables and protein on our plates and why it actually improves health and reduces the risk of this link to cancerStacy finds that it is interesting that so much emphasis is being placed on processed meat, and that we need to take a step back and discuss what processed meat is and understand if/how the carcinogenic factor of the food is being alteredThere are so many beneficial things to meat that are never discussedStacy feels that the information isn't truly representative of what these leading organizations know to be true, which is really unfortunate because this has led to so much confusionSarah feels like the opportunity to educate the general public is being completely missed, that we are trying to shortcut the science for the general public, assuming that they don't want the resources and tools to make informed choicesHow can we expect to make any change without changing how we communicate health information, the rules approach does not workThe choice in this situation isn't don't eat bacon, it is have some vegetables on the sideWe are constantly asking people to make these choices of deprivation, and the consequences this creates can be seen all around usWe need to help people understand what to eat, not just what not to eat, and to explain whyStacy's thoughts on all the ways you can get in your five servings - and don't forget that most of the compounds in fruit are also equally beneficialWhen in doubt add more vegetables to your plateStacy and Sarah will be back next week with a great topic!Old lady waysA reward for when Sarah finishes her bookThoughts on The MartianCarving out time to read for funAnd remember, be careful what you read on the internet, that seems to be the common thing that we are learningOutro (53:42)

Intro (0:00)News and Views (0:56)Sarah's children had a slight cold, and unfortunately she has laryngitis, and feels fine, but her voice is a bit croakyThe topic that was teased on last week's episode is coming very soon, we just have to work with our guest's scheduleSarah received some amazing news on The Healing Kitchen, which she just submitted to her publisher for first edits, and they love the first draft so much that they want to push it to publish two months earlier than originally planned Life is going to be a little crazy for Sarah as they move this book forward faster than expectedSarah is also working on a second book that will be out in 2016, which will be a more science focused bookSarah has lots of ideas for books and would love to release one yearly, but has to come up with a sustainable timeline on writing, editing and releasingIn Stacy's working world she is at the end of the fiscal year and things are so hectic; she is also recovering from an overtraining injury and trying to figure out the best solution to healingRecovery time has turned into quality family time for Stacy and familySarah's training as of late and what she has been working on at the gymStacy and Sarah like to keep this show timely, and to keep the topics flexible so that they can address relevant news when it becomes available and makes for a great discussion on the showThis week's show will be a great basics show to refer friends and family to who are interested in paleo, but will also be great for veterans who are looking to reconnect with some of the foundational beliefsScience with Sarah (23:27)There was a study published a few weeks back in the Proceedings of the National Academy of Sciences on the diets of paleolithic man and it has been cited all over the internet as the nail in the coffin that the paleo diet is deadSarah read through the entire study and found it to be fascinatingThe study found that there is a region where in paleolithic times, the humans from that region were cooking and grinding oats (find a bit from NPR on the subject here)The results from this study are making many say - great, we should now be eating oatsHowever, Sarah wants to note that there were many other nutrients that were found on the grinding stone that this study focused on, and we can't isolate the oats that were found on the stone and sum up the whole of their diet with the incorporation of the one nutrient The modern paleo diet isn't about a historical reenactment, it is about understanding exactly how food affects our health at a very detailed cellular levelGrains cannot compete with the powerhouses of nutrition that are quality meats, seafood, vegetables, and fruit, nuts and seeds, and eggsModern strains of grains are compounds that are inflammatory, and they are also high in sugar - Intro (0:00)News and Views (0:56)When Stacy reached out to Sarah to confirm the recording time there was a bit of a funny mix up over the topicWe have a lot of questions on constipation and it is an important topic to talk about because it is a common side effect of a lot of conditions, and people commonly experience it when transitioning their diet, but paleo may not correct the problem eitherConstipation is a relatively common thing to suffer from, yet experiencing daily healthy bowel movements is an important thingBut a bit on life before we get to the topicSarah turned in a book this last weekAnd Stacy celebrated a birthday, but she can't talk about general life updates knowing that a poop discussion is about to happen as discussing bodily functions makes her very uncomfortableScience with Sarah (9:00)This week Sarah wanted to discuss transit time and what all impacts thatWhat happens when you complete a transit test at a doctor's officeA good speed for food to move through the digestive track is between 18 and 24 hours, and if digestion takes longer than that it points to some deficiencies with digestionThings that impact speed are a variety of hormones, neurotransmitters, the type of gut bacteria that is present, and the muscle contractionsHormones are very sensitive to the foods we eatStool is made up of 80% bacteria so if you have too much bacteria or they are in the wrong part of your digestive track you are either building that bulk too soon up the gastro track or you are building up that bulk in an exaggerated wayBacteria is also very sensitive to the things we eatFiber is a regulator itself because what it does to hormones, the bacteria, and the gastro trackHaving sufficient fiber of both soluble and insoluble is very importantIt is also important to have proper fluid intakeMineral sufficiency is also important as it supports the muscle contractionsStress has a direct effect on bowel health, as does having an active lifestyle and quality and quantity of sleepThere are a bunch of other things that feed into digestion regulation as well, like the health of the digestive track organs and how you are chewing your foodFor people who are battling constipation it is key to think about how you are taking care of your gut bacteria, looking into possibly testing your neurotransmitters, and finally looking at a number of other medical conditions that all impact transit time - like autoimmune conditionsIt could be something as simple as drinking more water, consuming more fiber, or increasing a micronutrient that you are lacking inBut it could also be a lot more complicated and constipation should always be discussed with a medical professionalYou could also try things like the Squatty Potty or the Step and GoWhen constipation is caused by something outside of the digestive track it allows for a dysfunctional micro biome to develop, creating a stagnant environmentThe definition of constipation is a bowel movement every 48 hours if the bowel movement is not a good form on the bristol stool scale, if at 48 hours the form of the stool is still good than that would be defined as normal and not constipation. Even slight cheats with food lead to extreme swings in feeling terrible. Intro (0:00)News and Views (0:56)Stacy and Sarah had originally intended to host a part 2 discussion on sugar this week, but in light of recent discussions around Green Pastures fermented cod liver oil (FCLO), the hosts are going to shift gears this week to discuss rancid fats and what may or may not be happening with Green PasturesA lot of the real food community has recommended Green Pastures for a very long time - they make and manufacture a number of products and have for a long timeYou can find lots of information on Green Pastures throughout the community, as they have been a highly recommended supplement for a number of yearsWhen Sarah first recommended Green Pastures she took a look at how it was extracted and how the integrity of the product was kept intact to keep it as a whole foodWhat sparked this whole discussion was a study that Dr. Kaayla Daniels released based on data that a third-party had completed on her behalf, and how the quality and claims were different than what is provided by the brandThis study has caused a big debate in the real food communityExample of the discussions around the study can be found hereStacy is interested to learn more about the sides and the full-fact checking picture, because what concerns her about how this debate has unfolded is how the president of the Weston A Price Foundation made a decision to not investigate the concerns that were raised by the board of the Foundation on Green Pasture's productsGreen Pastures has offered members of the Weston A Price Foundation the chance to come and tour their farm and facilities to offer more insight into their product claimsStacy wants to point out that the decision to not take Green Pastures up on this offer to fully investigate the truth before making and sharing decisions with the community, shows a lack of thorough analysis when making brand/product decisions (we have seen this kind of decision making before when the paleo community was attacked, see here)Stacy's rebuttal to the paleo community attackSarah's rebuttal to the paleo community attackWhat Stacy and Sarah hope to accomplish in this episode is to remove the subjective feelings and to take a look at the facts and science behind the findings, and to take a deeper look at rancidity of fats so that listeners can make fully informed decisionsFirst Sarah wants to discuss Dr. Daniels report and the debate around her conclusions, as she is seeing some misunderstandings on the science and wants to shed some more light on those misunderstandings (20:04)Sarah finds it interesting that FCLO is considered a traditional food, yet Green Pastures is the only company that makes and sells it and it has only been on the market since 2007, when the Western A Price Foundation (WAPF) first highly endorsed itThe first criticism by Dr. Daniels is how can you ferment oil, you need to have something for a bacteria to eat - taking a deeper look at how Green Pastures explains their fermentation process on their siteHow difficult it is to draw conclusions is based on to what extent the product manufacturing information is shared by Green PasturesConcerns were first raised around Green Pastures product integrity by Dr. Ron Schmidt, see more hereOthers began to share their experiences and say that they too were experiencing negative effects from FCLO consumptionNourished and Nurtured shared a similar personal story as well, and how they too had experienced negative results from consistent FCLO consumptionIn March 2014 a Green Pastures competitor, Corganic released extra virgin cod liver oil and Dan Corrigan again questioned how you can ferment cod liver oil, which sparked the WAPF President (Sally Fallon) to threaten to ban Corrigan from WAPF eventsDr. Daniels first began looking into the science a bit more in December 2014, in response to these debates that were happening all over the place on FCLOThe way Sally (the WAPF president) then responded to these debates and Dr. Daniels concerns shows a lack of scientific investigation when addressing a question of the WAPF board and communityIn February 2015 the WAPF released a rebuttal to these debates, which then sparked Dr. Daniels to submit her own samples of Green Pastures FCLO for testing, and this is what her report that was recently released in August coversThe first investigation in the report, can this even be fermented? (30:39)The second piece she investigated was oil rancidityThe three different ways fats can go badOne of the other pieces that Dr. Daniels looked at was the vitamin contentThe omega 3 content is surprisingly low and there are trans fats present, but it is unclear if they are good or bad trans fatsThere are questions around whether or not these tests actually looked at all the different forms of vitamin A, D, K2 and if some forms were missedIt is clear what additional questions need to be exploredHowever, others have tried to undermine Dr. Daniels report by making unscientific statements in rebuttalThis raises some concerns for Sarah:We do not have all the answers and it is too difficult to make a statement yay or nay against FCLODr. Daniels will not share the information on the five labs who tested the FCLO, or where the funding for these studies came fromThis is essentially a debate between two sides and no one is providing all the information, which is frustrating because Sarah wants to share an informed decision with those looking for more informationStacy's personal feelings on the information that is being shared and her approach until more information is availableStacy just wants to encourage everyone to be subjective to the recommendations you receive, regardless of who those recommendations are coming fromNext week's show will be a sugar part 2 discussionPlease don't forget to leave those reviews in iTunes and to share with othersOutro (1:04:36)
