TweetSimple Beef Salami Made with Morton Tender Quick Today I want to discuss curing meats.  To do that we are joined by Ken Strayer a member of the TSP audience.  Ken has been curing meats for a few years and did a great job of answering my questions on the basics of curing meats. He was however, extremely efficient and his knowledge is limited to a few types of cured meats so the interview as only about 28 minutes long.  It was 28 extremely informative minutes but my shows are generally at least 50 minutes to an hour in length. So I am adding a bonus segment on the curing of meat via biltong method to the beginning of today’s show along with some stuff I picked up on simple quick “sausage style” cures.  Those might be some cool things you can do for the coming holidays. Also next week we will have The Farmstead Meatsmith on next week.  That will be a somewhat more advanced show.  So think of this show as part one of a two part series.  This will form the basis of your understanding of making cured meats, the basic process, etc. Ken is an awesome guy, he is a medically retired US veteran who served for 10 years in the United States Navy.  He is an avid outdoorsman who spend most of his free time backpacking and fly fishing throughout the North East.  He spends the rest of his time tending to his garden and small homestead, and cooking-and a hobbyist at smoking and curing meats of all types.  A listener of the show for about three years now, a supporter of liberty, and an Oathkeeper. TweetPrepping Week by Week for a Year. Today David Nash of TNGun.com returns to TSP. David is a full time emergency manger by trade, and an advocate of self-reliance and personal preparedness by avocation. He is also instructor certified in a variety of topics such as firearms, terrorism response, WMD, and incident command. He’s written two books, and runs a DIY focused prepper website, based around his training business “The Shepherd School”. Today he joins us first to talk about prepping from a DIY standpoint. David feels prepping is full of $500 problems, but if you only have $50, you have to use other ways of making up the difference.  We also discuss David’s new book “52 Prepper Projects. We also discuss his recent experience in being filmed completing several projects by the producers of “Doomsday Preppers”.  It sounds like Nat Geo is at least getting it a little bit.  They seem to now be focusing more on “projects” rather then making preppers out to be full on loons.  Yet as you will hear, they are still baiting those that appear on the show, forcing them to say they are prepping for a specific event and creating nonsensical false drama in the show. TweetFrom Nov. 21st to Nov. 23rd this month we are running an earthworks workshop, I think we still have two spots by the way for anyone that wants to come.  You can find out about that here. During this workshop we are putting in the main frame earth works for about .75 acres of food forest.  That is just the beginning though.  Main planting will occur in the spring.  At that time about 40 long term productive trees, lots of bushes and shrubs, some climbers and about 280 support trees will be planted. I talk about food forests often and point to work by people like Geoff Lawton as to how they work and frankly to show that they work.  I do my best but I think many don’t really get the how and less get the why.  Today’s show is an attempt to communicate that better than I have in the past. To me this might be the ultimate survival strategy for mankind by the way.  There is nothing that we know of on planet earth with the productivity and sustainability of a forest.  A food forest is simply a guided version of that blueprint that nature has used since long before we existed. TweetToday I am going to talk about permacutlure from an entirely different angle then I have in the past.  What I mean is the concept that really makes permaculture brilliant isn’t swales, food forests and biogas energy.  No it is the concept that we can do the following… Take responsibility for our own existence and that of our children and do so while not harming others, not harming natural systems and generate sufficient surplus for it to work. That of course is taking the prime directive of permaculture and the three ethics and making one goal oriented sentence out of them.  I would ask you this though, as a modern survivalist, is that not exactly what we should all be working for. Notice the above says nothing about growing plants, digging ditches, raising chickens or planting gardens.  Notice also there is nothing political about it, it is all about self responsibility, self governance and self directed decisions.  It begins with two words, “take responsibility” and once spoken those words leave no room to blame others, call on a government to fix a problem or sit around and hope that things get better. Two summers ago she left her corporate office gig to focus on the farm full-time and now runs a 6.5 acre homestead by herself south of the Adirondacks in Washington County, NY. There she grows most of her own food; raises her own meat, dairy, veggies and eggs with the aid of animal power. Horses pull firewood from the forest, a sheepdog manages the livestock, hawks are trained to take small game, and carts and saddles are used as much as her dented pickup truck. TweetI am going to continue with some fun stuff that is informative and not so deep into the world of politics, economics, etc.  Today I am going to line out the planned projects for our 3 acre property and what they will be doing for us long term. The first principle of permaculture in my mind is “observe and interact” and while interact is part of it, to me on a new property about a year of observation is really ideal for the planning process.  At this point I have been on my property for about 10 months.  I now know it intimately.  I know where the winds blow including when they don’t line up with the “official information” from the weather service. I know where my soils are a foot deep and where they are only a few inches above the limestone reef that is under this part of north Texas.  I know where water flows and where it pools.  I know the species that do well here on their own in all seasons.  I  have seen the results of my work with my animals an I know it works.  Islands of deep green now exist in pastures that are tired and mostly brown. I have had the great fortune to have my intern Josiah Wallingford of Bring of Freedom on property now for 3 months to aid in my planning.  We now have a much deeper understanding of many of our subtle contours.  Then we did an urban design workshop.  30 students received certification in Urban Design and we got amazing ideas for a small space design on the property.  Josiah and I have expanded these plans and it is all coming together.  Today I will do my best to explain our future plans and how this homestead is going to be transformed over the next year into a holistic system that is self supporting and will generate its own fertility.
