TweetSimple Ciders and Meads Fermenting Away So yesterday I did a quick segment on making ciders and meads the super simple and easy way.  While I felt I covered cider fully I got a few comments and a butt load of emails (over 20 on one subject I officially all a butt load) asking me for the “exact proceedure”.  So I decided to do that today, which takes about 3 minutes and hence expand it into a show on making meads and ciders in super simple and small batches. I have to thank mead maker extraordinaire Michael Jordan for cluing me in on the simplicity of making small batches of mead in water bottles.  This eliminates a lot of cleaning and sanitizing.  It cuts total time to almost nothing per batch too.  From there it was a very short mental leap to hey, pastured juice, add yeast and done, but will it be any good was the question. As it turns out major awards have been won in cider competition by people doing little more than fermenting low cost store bought apple juice and at times adding a bit of sugar.  I started checking into things like canned fruit, my friends a whole new world of fermentation has opened up to me, I want to share it with you today. Join Me Today To Discuss… First a disclaimer these methods are new to me, but pretty full proof Some definitions and items that will help you a lot in the world of fermentation Fermentation Attenuation Floculation Racking Priming Sterilize Pasteurize Sanitize Lees Cold Crash Stabilize Campden Tablets Potassium Sorbate Oxygenate Yeast Nutrient Staged Fermentation Pectic Enzyme Bottle carbonate Bottle condition Still cider/mead Force carbonate Specific Gravity Hydrometer Starsan – this is your friend! TweetMike Vertrees Permaculturist and Soil Guru Mike Vertrees lives and works part time on a 50 acre homestead in middle Tennessee. He first became interested in soils and compost as a way to repair the eroded clay soil he had in abundance. He mostly focused on what he calls the Hippie Voodoo aspects of soil science.  These included biodynamic techniques, information gleaned from youtube and several books. Mike soon found that a lot of the information was supported by anecdotal evidence at best, but none the less developed a real passion for experimenting. Mike participated in the Geoff Lawton online PDC in 2013 and took a lot of useful information from the soils sections of the course. In the spring of 2013 Mike came to PermaEthos as one of two original tenant farmers with Jesse Tegtmeier. Mike spent the season there immersed in all the educational opportunities and took advantage of getting to meet and learn from experts in several farming, permaculture, and homesteading disciplines. Since then Mike has be en sponsored by PermaEthos to study Soil and Soil biology under Dr. Elaine Ingham who has researched proven methods for soil restoration for the last 30+ years. While this episode rounds out the bow hunting deer series a few things should be pointed out.  Obviously all these recipes apply equally to the gun hunter or the person with that special friend that gives away deer meat.   Additionally it needs to be pointed out these are all fantastic ways to cook lamb, mutton and goat.  Indeed lamb specifically is a great analog to venison. Additionally in the sausage recipes you have two options.  One is to simply use 100% pork in them, if you use wild pork 1/3rd to 1/2 of the meat should be domestic pork for fat or just cut in 10-15% fatback.  The other is again to substitute lamb, mutton or goat for the venison, or for something really cool substitute duck or goose.
