Janice recently traveled to Austin, TX and joined 50 fellow dietitians for the Beans for a Better Life seminar, sponsored by the Northarvest Bean Growers Association. She ate dry beans in a variety of dishes, discussed their stellar nutritional benefits, and learned why they are called dry beans...not dried beans. On this week's show, podcast, we share her vast and new-found knowledge about all types of dry beans--pinto, navy, kidney and serve up a recipe from Chef Ann Cooper for White Bean Puree with Pita Bread. For Everyday with Rachael Ray, we contributed a recipe for General Tso's Chicken to their Makeover Meal section ... a recipe lower in fat and sodium (and filled with veggies) than the meal you'd find in most Chinese food restaurants. Spring has arrived early here in New England, but that hasn't stopped us from savoring the memories from our winter vacations last month. Janice traveled to Cabo San Lucas in Mexico where she enjoyed lots of sunshine and Liz and her family hit the slopes of Park City. We chat about food and fitness adventures on this week's podcast.
