Chocolate Waffles for Lurry Dean http://farm3.static.flickr.com/2480/3581761122_62330e2756_m.jpg 1-½ c cake flour (sifted) 1 Tablespoon baking powder ½ teaspoon salt 4 Tablespoons butter, melted ½ cup chocolate syrup (plus extra for drizzling) 2 eggs, lightly beaten 1 cup sugar ¾ cup milk ½ teaspoon vanilla vanilla ice cream Sift together flour, baking powder and salt into a large bowl and set aside. Melt butter in a medium size bowl. Add ½ cup chocolate syrup and mix until combined. Let cool. In a large bowl, combine 2 eggs, sugar, milk and vanilla. Stir thoroughly. Add in the chocolate mixture and stir until combined. Add chocolate mixture to the dry ingredients. Stir just until smooth. Heat waffle iron to a medium setting. Spray with cooking spray before each batch. These are very soft, and burn easily. Texture of waffle will be like a soft brownie. Top with vanilla ice cream and a drizzle of chocolate syrup. Microwave Caramel Popcorn 3-4 quarts of popped corn (approx. 4 snack size bags of microwave popcorn) 1 cup brown sugar 1 stick of butter 1/4 cup light corn syrup 1/2 teaspoon salt 1/2 teaspoon baking soda large paper grocery bag Pop the corn. Place in the paper bag and set aside. Combine sugar, butter, corn syrup, and salt (NOT THE BAKING SODA YET!) in a large microwave-safe bowl. Cook on high in the microwave until butter is melted and mixture comes to a boil. Mix completely, then microwave an additional 2 minutes on high. Remove from microwave and stir in baking soda. Mix well. Mixture will form tiny bubbles and lighten in color. Mix well. Pour the syrup over the corn in the paper bag. Stir a bit with a long handled spoon to get it going. Then close the bag and shake it around a while to mix well. Put bag into the microwave and cook on high for 2 more minutes. If it won?t fit in the microwave, you can skip this step and it will still be good. Give it one final mix and then pour it out into a huge bowl on onto a cookie sheet and let it cool.
